• 3 medium tomatoes, peeled,chopped
  • 1/2 C cucumber, seeded, chopped
  • 1/2 C green pepper, chopped
  • 2 green onions, sliced
  • 2 C low-sodium vegetable juice cocktail
  • 1 Tbsp lemon juice
  • 1/2 tsp basil, dried
  • 1/4 tsp hot pepper sauce
  • 1 clove garlic, minced

  1. In large mixing bowl, combine all ingredients.
  2. Cover and chill in the refrigerator for several hours.
